Builders do this because wood is dimensionally honest: it takes on a moisture content in equilibrium with the surrounding air, and it was cut, fitted and glued at exactly that size.
Wood remembers the room it was built in
At roughly 46–50% RH and room temperature, the wood in a guitar settles near the moisture content luthiers consider ideal for assembly. Braces are glued to the top at that size. The fretboard is slotted and fretted at that size. The top's slight dome is set at that size. Move the guitar to 30% RH and every part shrinks — but not equally, because grain direction and species differ. A spruce top can lose around 1/8 inch of width going from 47% to 30% RH while the neck and frets barely move: the top sinks, action drops, fret ends stand proud, and glue joints and finish carry stress the builder never intended. Push the other way, above 60%, and the same geometry swells: high action, muffled tone, lifting bridges. Is 45%, 49% or 50% the 'correct' number? Anywhere in the 45–52% band recreates build conditions; stability inside the band matters more than the exact point. 49% simply sits mid-zone with margin both ways.
